Instructions
- Preheat and Prepare Pan: Preheat the oven to 350ºF (175ºC). Spray a loaf pan with nonstick cooking spray and line it with parchment paper for easy removal of the bread after baking.
- Make Cinnamon Sugar Mixture: In a small bowl, combine sugar and ground cinnamon. Set this mixture aside to use for the swirls inside the bread.
- Prepare the Batter: In a large bowl, use a handheld mixer to cream the softened butter and sugar together until light and fluffy. Add the egg and vanilla extract and mix well. Then add the buttermilk, all-purpose flour, and baking soda, mixing until the batter is smooth and well combined.
- Layer Batter and Cinnamon Sugar: Spread half of the batter evenly into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter. Use a butter knife to swirl the cinnamon sugar into the batter gently. Repeat with the remaining batter and sprinkle the remaining cinnamon sugar on top, swirling again with a knife to distribute the cinnamon sugar through the batter.
- Bake the Bread: Bake in the preheated oven for 45 to 50 minutes. Check doneness by inserting a toothpick into the center of the bread; it should come out clean or with only a few moist crumbs attached.
- Cool and Serve: Let the bread cool in the pan for 15 minutes. Then remove it from the pan and transfer to a wire rack to cool completely before slicing. This helps the bread to set and slice cleanly.
