Ingredients
Scale
Sausage and Seafood
- 1 pound andouille sausage, sliced
- 1 pound raw shrimp, peeled and deveined
Vegetables
- 1 cup chopped onions
- 1 cup chopped bell peppers
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
Dry Goods & Liquids
- 1 1/2 cups long-grain rice
- 3 cups chicken broth
Seasonings
- 1 teaspoon cayenne pepper
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
Instructions
- Brown sausage: Heat a large pot over medium-high heat. Add the sliced andouille sausage and cook, stirring occasionally, until it is well browned and has released its flavorful oils, about 5 minutes.
- Sauté vegetables: Add the chopped onions, bell peppers, and minced garlic to the pot with the sausage. Cook, stirring frequently, until the vegetables have softened, about 4 to 5 minutes.
- Add rice: Stir in the long-grain rice, mixing well to coat the rice with the oil and flavors from the sausage and vegetables.
- Add liquids and seasonings: Pour in the canned diced tomatoes and chicken broth. Season the mixture generously with cayenne pepper, salt, and black pepper. Stir to combine and bring the pot to a vigorous boil.
- Simmer with shrimp: Once boiling, reduce the heat to low. Gently fold in the raw shrimp, cover the pot tightly, and let it simmer until the shrimp are cooked through and the rice has absorbed the liquid, about 10 to 15 minutes.
- Rest and serve: When the rice is tender and liquid is absorbed, remove the pot from heat. Stir gently to fluff the jambalaya, then cover and let it rest for 5 minutes before serving to let flavors meld.
Notes
- For best texture, do not lift the lid during simmering to maintain steam and heat.
- Adjust cayenne pepper to your preferred spice level.
- You can substitute chicken or turkey sausage for a milder flavor.
- Add chopped celery for additional classic Cajun flavor and texture.
- Use low-sodium chicken broth to control salt content.
