Description

Beef Mixture

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 can (10 ounces) diced tomatoes with green chilies, drained
  • 1 can (15 ounces) black beans, rinsed and drained

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s hot and ready for baking the casserole.
  2. Cook Beef and Onion: In a large skillet over medium heat, cook the ground beef and diced onion together until the beef is browned and the onions are soft, about 5 to 7 minutes.
  3. Add Garlic: Stir in the minced garlic and cook for an additional 1 minute, then drain any excess grease from the skillet to reduce fat.
  4. Season Beef Mixture: Mix in the taco seasoning and water, simmering for 2–3 minutes until the mixture thickens slightly.
  5. Add Tomatoes and Beans: Stir in the drained diced tomatoes with green chilies and the black beans until everything is well combined.
  6. Layer Ingredients: Grease a 9×13-inch baking dish. Layer half of the crushed tortilla chips on the bottom, followed by half the beef mixture and half the shredded cheese. Repeat these layers.
  7. Add Toppings: Spread the sour cream evenly over the top layer, then sprinkle with the remaining cheese, black olives (if using), and chopped green onions.
  8. Bake: Place the casserole in the preheated oven and bake uncovered for 20 to 25 minutes until the casserole is bubbly and the cheese is fully melted.
