Ingredients
Scale
Muffin Batter
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup butter, melted
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups fresh or frozen blackberries
Oatmeal Streusel
- 1/2 cup old-fashioned oats
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 cup butter, cold and cubed
Instructions
- Preheat and prepare muffin tin: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners to prevent sticking and ensure easy removal of muffins.
- Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- Combine wet ingredients: In a separate bowl, whisk the melted butter, eggs, milk, and vanilla extract thoroughly to blend.
- Combine wet and dry mixtures: Add the wet ingredients to the dry ingredients and gently mix until just combined. Avoid overmixing to keep muffins tender. Carefully fold in the blackberries to distribute evenly without crushing them.
- Prepare streusel topping: In a small bowl, mix the oats, flour, and brown sugar. Using a pastry cutter or your fingers, cut in the cold cubed butter until the mixture resembles coarse crumbs.
- Fill muffin cups and add streusel: Spoon the batter into the prepared muffin cups filling about 3/4 full. Evenly sprinkle the oatmeal streusel over the tops of each muffin.
- Bake muffins: Bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.
- Cool muffins: Allow the muffins to cool in the tin for 5 minutes. Then transfer them onto a wire rack to cool completely to preserve texture and prevent sogginess.
Notes
- Use fresh blackberries for best texture; if using frozen, do not thaw to prevent bleeding into the batter.
- Do not overmix the batter to keep muffins light and fluffy.
- The streusel topping adds a delightful crunch and can be customized by adding chopped nuts or cinnamon.
- Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
