Description

A delightful twist on a classic grilled cheese sandwich, featuring creamy Brie cheese paired with a sweet and tangy blueberry honey compote, all grilled to golden perfection for a deliciously melty and fruity treat.

Ingredients

Scale

For the Blueberry Mixture

  • 1 cup of fresh blueberries
  • 2 tablespoons of honey
  • 1/4 teaspoon of lemon zest
  • A pinch of salt

For the Sandwich

  • 4 slices of bread (sourdough or your choice)
  • 2 tablespoons of unsalted butter, at room temperature
  • 4 ounces of creamy Brie cheese, sliced
  • Optional: fresh basil leaves for garnish

Instructions

  1. Prepare the blueberry mixture: In a small saucepan over medium heat, combine the fresh blueberries, honey, lemon zest, and a pinch of salt. Cook the mixture while stirring occasionally for about 5 minutes until the blueberries release their juices and the mixture thickens slightly. Remove from heat and set aside to cool.
  2. Preheat the skillet: Place a skillet or griddle over medium heat to warm up while you assemble the sandwiches.
  3. Butter the bread: Spread unsalted butter evenly on one side of each slice of bread. Arrange two slices on a clean surface with the buttered side facing down.
  4. Assemble the sandwich: Layer the sliced creamy Brie cheese evenly over the unbuttered side of the bread slices on your work surface. Then spoon the cooled blueberry mixture over the Brie, spreading it evenly.
  5. Complete the sandwich: Top with the remaining slices of bread, buttered side up, pressing down gently to form sandwiches.
  6. Grill the sandwiches: Place the sandwiches in the preheated skillet. Cook for 3 to 4 minutes on each side or until the bread turns golden brown and the cheese melts, pressing gently with a spatula to ensure even cooking and melting.
  7. Rest and serve: Remove the sandwiches from the skillet and allow them to rest for one minute. Slice in half and serve warm, optionally garnished with fresh basil leaves.

Notes

  • Use sourdough or your favorite hearty bread for the best flavor and texture.
  • Room temperature butter spreads more easily and helps achieve an even golden crust.
  • The blueberry mixture can be made ahead and refrigerated for up to 2 days.
  • For a stronger fruit flavor, let the blueberry mixture simmer a little longer to thicken further.
  • Fresh basil leaves add a lovely herbal freshness but can be omitted if unavailable.
