Sweet Potatoes

Lime Cilantro Butter

  • 4 tbsp unsalted butter, softened
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • Zest of 1 lime
  • 1/2 tsp chili powder (optional, for a spicy kick)
  • Salt, to taste


Instructions

  1. Prepare the Sweet Potatoes: Preheat your oven to 425°F (220°C). In a large mixing bowl, combine the cubed sweet potatoes with olive oil, ground cumin, paprika, salt, and pepper. Toss well to evenly coat all the pieces in the seasoning and oil.
  2. Roast the Sweet Potatoes: Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper or lightly greased. Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until they are tender and slightly caramelized on the edges.
  3. Make the Lime Cilantro Butter: While the sweet potatoes roast, mix the softened unsalted butter with chopped cilantro, lime juice, lime zest, chili powder (if using), and a pinch of salt in a small bowl until well combined.
