- 4 tbsp unsalted butter, softened

Instructions
- Prepare the Sweet Potatoes: Preheat your oven to 425°F (220°C). In a large mixing bowl, combine the cubed sweet potatoes with olive oil, ground cumin, paprika, salt, and pepper. Toss well to evenly coat all the pieces in the seasoning and oil.
- Roast the Sweet Potatoes: Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper or lightly greased. Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until they are tender and slightly caramelized on the edges.
- Make the Lime Cilantro Butter: While the sweet potatoes roast, mix the softened unsalted butter with chopped cilantro, lime juice, lime zest, chili powder (if using), and a pinch of salt in a small bowl until well combined.
- Combine and Serve: Once the sweet potatoes are done roasting, transfer them to a serving dish and immediately toss with the lime cilantro butter so it melts and coats the sweet potatoes beautifully. Adjust seasoning with additional salt if needed. Serve warm.
