Cheese & Add-ons

  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded Monterey Jack cheese (or any cheese that melts well)

Instructions

  1. Prepare the Egg Mixture: In a small bowl, crack the eggs and add milk or cream, salt, and freshly ground black pepper. Whisk the mixture thoroughly until it is fully combined and slightly frothy.
  2. Assemble the Grilled Cheese: Spread softened butter on one side of each bread slice. Flip two slices over so the buttered side is down. Evenly sprinkle half of the cheddar cheese, then half of the Monterey Jack cheese, and, if using, half the crumbled bacon on each. Add remaining cheeses on top, then cover with the other bread slices, butter-side up.
  3. Cook the Egg-Soaked Grilled Cheese: Heat the olive oil in a large non-stick skillet over medium-low heat. Dip each assembled sandwich into the egg mixture, coating both sides well, and let the excess drip off before placing it in the skillet.
  4. Cook First Side: Cook the sandwich for 3-5 minutes on the first side, or until it turns golden brown and the cheese begins to melt and become gooey. Use a spatula to gently press down, adjusting the heat as necessary to avoid burning.
