Description

  • 4 8″ whole wheat tortillas
  • 1 cup pizza sauce

Egg Mixture

  • 1 cup shredded mozzarella
  • 1 tbsp olive oil (for cooking)


Instructions

  1. Prepare Tortillas: Spread 3-4 tablespoons of pizza sauce evenly onto each whole wheat tortilla and set them aside to be used later.
  2. Preheat Skillet: Heat a 10-inch nonstick skillet over medium-low heat and add enough olive oil to lightly coat the pan to prevent sticking while cooking the eggs.
  3. Prepare Egg Mixture: In a bowl, whisk together the eggs, milk (if using), salt, and pepper to create a smooth and fluffy egg mixture.
  4. Cook Egg Layer: Pour one quarter of the egg mixture into the skillet and spread it out evenly to form a thin omelet. Cook until the eggs are mostly set but still slightly soft on top.
  5. Add Toppings: Spoon 3-4 tablespoons of pizza sauce over the egg layer, followed by an even layer of 3-4 tablespoons shredded mozzarella cheese.
  6. Add Tortilla: Place one prepared tortilla sauce side down on top of the egg, pressing gently to help it adhere to the egg and cheese layer.
  7. Cook and Roll: Carefully swirl the tortilla in the pan to ensure the egg cooks completely and the tortilla sticks firmly. Slide the tortilla onto a plate or cutting board, then flip it back into the pan with the tortilla side down and cook for an additional 30 seconds.
  8. Finish and Serve: Remove the egg-topped tortilla from the pan, let it cool slightly, then roll it up with the tortilla side out. Repeat the process for the remaining tortillas and egg mixture.
