Description

These savory Broccoli and Feta Brownies combine fresh broccoli florets, tangy feta, and melted mozzarella cheese into a unique, baked dish that’s perfect for a wholesome snack or a light meal. Enhanced with fresh dill and scallions, these flavorful brownies bake to a golden perfection with a crispy top, delivering a delightful blend of textures and a rich cheesy aroma.

Ingredients

Scale

Vegetables and Herbs

  • 7 oz broccoli florets
  • 4 scallions, diced
  • 3 tbsp fresh dill, chopped

Dry Ingredients

  • 1¼ cup all-purpose flour (or almond flour/gluten-free flour)
  • 1 tsp baking powder
  • 1 tsp salt

Dairy and Eggs

  • 1 cup milk
  • 2 eggs, lightly beaten
  • 4 oz feta cheese, crumbled
  • 4 oz mozzarella cheese, shredded
  • 3 tbsp grated pecorino cheese

Oils and Others

  • 1 tsp olive oil (for sautéing)
  • ¼ cup olive oil (for batter)
  • Olive oil spray (for baking dish and topping)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly spray an 11×7-inch baking dish with olive oil to prevent sticking and promote even browning.
  2. Prepare Broccoli: Bring a pot of salted water to a boil, add the broccoli florets and boil for 1 minute. Remove the broccoli and place it on a paper towel-lined plate to drain and dry thoroughly. Once dry, chop the broccoli roughly.
  3. Sauté Scallions: Empty and clean the pot, then heat 1 teaspoon olive oil over medium-high heat. Sauté the diced scallions for 1 minute just until they soften slightly. Set aside to cool.
  4. Make Batter: In a large mixing bowl, whisk together the flour, baking powder, and 1 teaspoon salt. Add the milk, lightly beaten eggs, and ¼ cup olive oil, mixing until the batter thickens. If the batter is too runny, incorporate more flour, one tablespoon at a time, to achieve a thicker consistency.
  5. Fold in Ingredients: Gently fold the chopped broccoli, sautéed scallions, chopped dill, crumbled feta, and shredded mozzarella cheese into the batter until evenly combined.
  6. Prepare for Baking: Pour the mixture into the prepared baking dish and spread it evenly using a spatula. Sprinkle the top with grated pecorino cheese and lightly spray with olive oil to facilitate browning.
  7. Bake: Bake in the preheated oven for 45 to 50 minutes or until the surface turns golden brown and a toothpick inserted in the center comes out clean.
  8. Cool and Serve: Allow the brownies to cool in the pan for about 10 minutes before slicing. Serve warm or at room temperature as a savory treat.

Notes

  • You can substitute all-purpose flour with almond or gluten-free flour to accommodate dietary preferences.
  • Ensure the broccoli is well-drained to avoid soggy brownies.
  • Adding more grated cheese on top before baking gives a richer, more flavorful crust.
  • These brownies can be reheated gently in the oven or microwave for best texture.
  • Adjust baking time slightly based on your oven’s performance to avoid over or under-baking.
