Ingredients
Scale
Buffalo Chicken Filling
- 1 cup cooked chicken, shredded
- 2 tablespoons buffalo sauce
- 2 tablespoons cream cheese, softened
- ¼ cup shredded mozzarella cheese
- ¼ cup shredded cheddar cheese
- 1 tablespoon ranch dressing
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- Salt & black pepper, to taste
Pastry & Finishing
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- 1 tablespoon butter, melted
- 1 teaspoon chopped fresh parsley (for garnish)
- ¼ teaspoon flaky sea salt (optional)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
- Prepare the Buffalo Chicken Filling: In a mixing bowl, combine the shredded chicken with buffalo sauce, softened cream cheese, shredded mozzarella and cheddar cheeses, ranch dressing, garlic powder, onion powder, smoked paprika, and salt and black pepper. Mix thoroughly until all ingredients are well blended.
- Prepare the Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet to smooth out any creases. Cut the pastry into 9 equal-sized squares using a knife or pizza cutter.
- Fill and Seal the Pastry: Place a generous spoonful of the buffalo chicken mixture in the center of each pastry square. Fold the corners inward and pinch the edges firmly to seal each pouch, ensuring the filling is enclosed.
- Bake the Pastry Bites: Arrange the filled pastries seam-side down on the prepared baking sheet. Brush the tops with the beaten egg to promote a shiny, golden finish. Bake in the preheated oven for 18-20 minutes until the pastries are puffed, golden brown, and flaky.
- Finish and Serve: Once baked, remove the pastry bites from the oven and immediately brush them with melted butter to add richness and shine. Sprinkle with chopped fresh parsley and flaky sea salt if desired for an extra touch of flavor. Serve the warm bites with ranch or blue cheese dressing on the side for dipping.
Notes
- Make sure the puff pastry is fully thawed before cutting to prevent cracking.
- Adjust the amount of buffalo sauce to your preferred spice level.
- For a crispier crust, bake on a wire rack placed over the baking sheet.
- Leftover filling can be used as a dip or in sandwiches.
- These bites are best served warm fresh from the oven.
