Base Layer

Coffee Custard Layer
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tablespoons vanilla custard powder (or instant vanilla pudding mix)
- 2 tablespoons strong brewed coffee, cooled
- 1 tablespoon milk
- 1/2 teaspoon vanilla extract
Chocolate Topping
- 4 ounces semi-sweet chocolate, chopped
- 2 tablespoons unsalted butter
Instructions
- Prepare the Base: In a bowl, combine the melted butter, granulated sugar, cocoa powder, beaten egg, and vanilla extract. Mix in the graham cracker crumbs, shredded coconut, and chopped walnuts (if using) until evenly combined. Press the mixture firmly into the bottom of a greased or parchment-lined 9×9-inch baking pan. Set aside to form a solid base.
- Make the Coffee Custard Layer: In a separate bowl, beat the softened butter until smooth. Gradually add powdered sugar and vanilla custard powder, mixing well. Add the cooled brewed coffee, milk, and vanilla extract. Continue mixing until the custard mixture is smooth and creamy. Spread this evenly over the prepared base layer in the baking pan. Use a spatula to smooth the top for an even layer.
- Prepare the Chocolate Topping: Melt the semi-sweet chocolate together with the unsalted butter in a heatproof bowl over simmering water or in short intervals in the microwave, stirring until smooth. Pour the melted chocolate mixture over the custard layer and spread evenly with a spatula to cover the entire surface.
- Chill and Set: Place the assembled bars in the refrigerator and chill for at least 2 hours to allow all layers to set firmly. This chilling step is critical to achieving the proper texture and clean slices.
- Slice and Serve: Once fully set, remove the bars from the pan by lifting the parchment paper (if used) or carefully loosening the edges with a knife. Cut into 16 even squares and serve chilled for best taste and texture.
