  • ½ large yellow onion, finely diced
  • ¼ cup mayonnaise

Cheese and Rolls

  • 8 slices medium cheddar cheese
  • 6 ounces medium cheddar cheese, shredded (or more sliced cheese as preferred)
  • 24 dinner rolls

Topping

  • 2 tablespoons unsalted butter, melted, plus more to grease baking sheet
  • 1 tablespoon sesame seeds


Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and grease a rimmed baking sheet well with melted butter to prevent the sliders from sticking and to add flavor.
  2. Cook Beef and Onions: In a large skillet, heat olive oil over medium-high heat. Add the finely diced yellow onion along with the ground beef. Break up the meat as it cooks, and season with salt, black pepper, and garlic powder. Cook thoroughly until no pink remains and the onion is softened.
  3. Drain Fat and Mix Mayonnaise: Carefully tilt the skillet and spoon off any excess fat. Stir in ¼ cup of mayonnaise into the cooked beef mixture to add moisture and creaminess.
  4. Assemble Sliders: Slice the dinner rolls in half horizontally. Place the bottom halves on the greased baking sheet. Add one slice of cheddar cheese on each bottom roll followed by an even layer of the beef mixture over the cheese. Sprinkle the shredded cheddar cheese evenly on top, then place the top halves of the rolls over the beef and cheese layers.
