Ingredients
Scale
Chicken and Sauce
- 1½ pounds boneless, skinless chicken breasts
- 3 cups low-sodium chicken broth
- 2 cups heavy cream
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
Pasta and Cheese
- 12 ounces uncooked fettuccine, broken in half
- 1½ cups freshly grated Parmesan cheese
- 1 cup shredded mozzarella cheese
Garnish
- 2 tablespoons chopped fresh parsley
Instructions
- Prepare the slow cooker: Place the boneless, skinless chicken breasts at the bottom of the slow cooker for an even cooking base.
- Add liquids and seasonings: Pour in the low-sodium chicken broth and heavy cream. Stir in the minced garlic, Italian seasoning, salt, and black pepper to infuse flavor into the cooking liquid.
- Cook the chicken: Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the chicken is tender and fully cooked through.
- Shred the chicken: Remove the chicken breasts from the slow cooker and shred them finely using two forks. Return the shredded chicken back to the slow cooker.
- Add pasta: Add the uncooked fettuccine pasta to the slow cooker. Stir gently to submerge the pasta completely in the creamy liquid to ensure even cooking.
- Cook the pasta: Cover and cook on high for 25 to 35 minutes, stirring once or twice, until the pasta is tender but not mushy.
- Finish with cheese: Stir in the freshly grated Parmesan and shredded mozzarella cheeses. Mix until the cheeses have melted completely and the sauce is smooth and creamy.
- Serve and garnish: Ladle the cheesy chicken Alfredo into bowls and garnish with chopped fresh parsley for a burst of color and freshness.
Notes
- For a quicker version, use cooked rotisserie chicken and add it along with the pasta to reduce cooking time.
- To increase vegetable intake, stir in steamed broccoli or fresh spinach when adding the pasta.
- Using freshly grated Parmesan and mozzarella cheese ensures better texture and smoother melting.
