Ingredients
Scale
Meat and Cheese
- 1 pound ground beef (or ground turkey or plant-based alternative)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
Potatoes and Tortillas
- 2 cups frozen tater tots
- 6 large flour tortilla wraps
Condiments and Seasoning
- Salt and pepper, to taste
- 1/2 cup sour cream (plus extra for serving)
- 1/4 cup Taco Bell chipotle sauce, adjust to taste (plus extra for serving)
Optional Garnishes
- Diced tomatoes
- Chopped green onions
- Chopped cilantro
Instructions
- Prepare the Tater Tots: Preheat your oven according to the instructions on the frozen tater tots package. Bake them until they are golden brown and crispy. Set aside once done.
- Cook and Season the Beef: Heat a skillet over medium heat and add the ground beef. Cook until fully browned, breaking it up as it cooks. Season with salt and pepper to taste. Drain off any excess grease to keep the filling moist but not greasy.
- Mix the Filling: In a large bowl, combine the cooked ground beef, slightly crushed crispy tater tots, shredded cheddar, and Monterey Jack cheese. Mix thoroughly so that all ingredients are evenly incorporated.
- Warm the Tortillas: To make the tortillas pliable and easier to roll, heat them in a dry skillet for a few seconds or microwave each for 10 to 15 seconds until soft.
- Assemble the Burritos: Lay out each warm tortilla and spoon a generous amount of the beef and potato filling onto the center. Drizzle some Taco Bell chipotle sauce over the filling and add a dollop of sour cream.
- Fold the Burritos: Fold the sides of the tortilla over the filling, then fold the bottom up and roll tightly to secure the filling inside, forming a neat burrito.
- Bake with Cheese: Place the assembled burritos seam side down in a baking dish. Sprinkle additional shredded cheese on top of each burrito. Bake in a preheated oven for about 5-7 minutes or until the cheese is melted and bubbly.
- Garnish and Serve: Remove the burritos from the oven and garnish with optional diced tomatoes, chopped green onions, and cilantro. Serve hot with extra sour cream and chipotle sauce on the side for an added kick.
Notes
- For a lighter option, use ground turkey or a plant-based meat alternative.
- Adjust the amount of chipotle sauce according to your preferred spice level.
- Make sure not to overheat tortillas to avoid drying and cracking.
- For extra crispiness, you can air fry the burritos after assembling instead of baking.
- Leftover burritos can be reheated in the oven or microwave but bake briefly to maintain crispiness.
