For the Shrimp:
- 1 lb large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 chipotle peppers in adobo sauce, minced
- 1 tablespoon adobo sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
For the Bowl:
- 2 cups cooked white or brown rice
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- Lime wedges, for serving
For the Lime Crema:
- 1/2 cup plain Greek yogurt or sour cream
- Juice of 1 lime
- 1 clove garlic, minced
- Salt to taste
Instructions
- Marinate Shrimp: In a bowl, toss the shrimp with olive oil, minced chipotle peppers, adobo sauce, smoked paprika, cumin, garlic powder, salt, and pepper. Allow the shrimp to marinate for 10 minutes for flavors to meld.
- Prepare Lime Crema: While the shrimp marinates, whisk together the Greek yogurt or sour cream with lime juice, minced garlic, and a pinch of salt in a small bowl. Chill this lime crema until ready to serve.
- Cook Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp and cook them for 2-3 minutes per side until they are pink and fully cooked through.
- Assemble Bowls: Divide the cooked rice evenly into four bowls. Top each portion with black beans, corn kernels, cherry tomato halves, avocado slices, and thinly sliced red onion.
- Add Shrimp and Garnish: Place the cooked shrimp over the toppings in each bowl, drizzle with the chilled lime crema, sprinkle with fresh chopped cilantro, and serve with lime wedges on the side.
Notes
- You can substitute brown rice for white rice for a nuttier flavor and added fiber.
- To make it spicier, add extra chipotle peppers or a dash of cayenne pepper.
- For a creamier bowl, add a dollop of guacamole or additional sour cream on top.
- This recipe can be made gluten-free by ensuring all canned ingredients have no gluten additives.
