Description

A tangy and sweet Colombian Pineapple Sauce made with fresh pineapple, pineapple juice, vinegar, brown sugar, and aromatic spices. This versatile sauce is simmered on the stovetop to blend flavors perfectly and thickened with a cornstarch slurry for a luscious texture. Ideal for serving with grilled meats or empanadas, it can also be blended for a smoother consistency.

Ingredients

Scale

Fruit and Juices

  • 2 cups fresh pineapple, finely chopped
  • 1/2 cup pineapple juice

Vinegar and Sugar

  • 1/4 cup white vinegar
  • 1/3 cup brown sugar or panela, grated

Vegetables and Aromatics

  • 1 small onion, finely minced
  • 1 clove garlic, minced

Spices

  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt

Thickener

  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Combine ingredients: Place the chopped pineapple, pineapple juice, white vinegar, brown sugar, minced onion, minced garlic, ground cumin, and salt in a medium saucepan over medium heat. Stir the mixture well to combine all ingredients.
  2. Simmer the sauce: Bring the mixture to a gentle simmer and cook for 10 to 12 minutes, stirring occasionally, until the pineapple softens and the flavors meld together beautifully.
  3. Prepare the cornstarch slurry: In a small bowl, mix the cornstarch with water until smooth to form a slurry, ensuring no lumps remain.
  4. Thicken the sauce: Slowly stir the cornstarch slurry into the simmering sauce. Continue cooking for 2 to 3 minutes while stirring, until the sauce thickens to a luscious consistency.
  5. Cool and serve: Remove the sauce from heat and allow it to cool slightly before serving. Optionally, blend the sauce for a smoother texture before serving.

Notes

  • This sauce pairs wonderfully with grilled chicken, pork, or empanadas.
  • For a smoother sauce, blend after cooking until desired consistency is reached.
  • Adjust sweetness or acidity by adding more brown sugar or vinegar to taste.
