Salad
- 1 (16-oz) package coleslaw mix (shredded cabbage and carrots)
- 1 (15-oz) can black beans, drained and rinsed
- 1½ cups frozen corn, thawed and drained
- 1 cup red bell pepper, chopped
- ¼ cup jalapeños, finely chopped
- ½ cup chopped fresh cilantro
- ¼ cup chopped green onions
Instructions
- Prepare the Dressing: In a large bowl, whisk together the mayonnaise, sour cream, lime juice, pureed chipotle in adobo sauce, taco seasoning, and ground cumin until smooth and creamy. Season with salt and black pepper to your preference.
- Combine the Salad Ingredients: Add the coleslaw mix, black beans, thawed and drained corn kernels, chopped red bell pepper, and finely chopped jalapeños to the dressing. Stir well to evenly coat all the vegetables with the creamy dressing.
