Description

This moist and flavorful Cream Cheese Carrot Bundt Cake combines the classic spices of carrot cake with a rich cream cheese filling, all baked to perfection in a bundt pan. Topped with a luscious coconut pecan frosting infused into the batter, this cake is perfect for celebrations or a sweet treat any day.

Ingredients

Scale

Cake Batter

  • 1 box Carrot Cake mix
  • 1 cup water
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 (16-oz) can Coconut Pecan frosting

Cream Cheese Filling

  • 1 (8-oz) package cream cheese, softened
  • â…“ cup sugar
  • 1 tsp vanilla extract
  • 1 large egg

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350ºF. Grease a bundt pan thoroughly with cooking spray to prevent sticking and set it aside for later use.
  2. Mix Cake Batter: In a large mixing bowl, combine the carrot cake mix, water, vegetable oil, 4 large eggs, and the entire can of coconut pecan frosting. Using a handheld mixer, beat the ingredients together until the batter is smooth and well incorporated.
  3. Prepare Cream Cheese Filling: In a separate bowl, beat the softened cream cheese with sugar, vanilla extract, and 1 large egg using a handheld mixer until the mixture is smooth and creamy. Set this mixture aside.
  4. Assemble the Cake: Pour about three-quarters of the carrot cake batter into the prepared bundt pan. Carefully spoon the cream cheese filling evenly over the batter, then top with the remaining cake batter, smoothing the top gently.
  5. Bake: Place the bundt pan in the preheated oven and bake for 60 minutes or until a toothpick inserted into the cake (avoiding the cream cheese swirl) comes out clean.
  6. Cool and Serve: Remove the cake from the oven and let it cool in the pan for 10 minutes. Then invert the pan onto a wire rack and allow the cake to cool completely before serving or frosting.

Notes

  • Ensure the cream cheese is fully softened for a smooth filling without lumps.
  • Do not overmix the batter once combined with the cream cheese filling to keep a nice swirl effect in the cake.
  • Test cake doneness with a toothpick inserted into cake batter areas, not into the cream cheese section.
  • This cake pairs well with additional cream cheese frosting or a dusting of powdered sugar if desired.
  • Use room temperature ingredients for the best mixing consistency.
