  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning

  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Brown the Sausage: Heat olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook for 4–5 minutes until browned. Remove the sausage from the skillet and set it aside.
  2. Sauté Vegetables: In the same skillet, add the chopped onion and sauté for 2–3 minutes until softened. Then add minced garlic, sliced red bell pepper, chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Cook for an additional 2 minutes, stirring occasionally.
  3. Deglaze and Make Sauce: Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Stir in the heavy cream and grated Parmesan cheese, stirring continuously until the sauce is smooth and slightly thickened, about 3–4 minutes.
  4. Combine and Wilt Spinach: Return the browned sausage to the skillet and add the fresh spinach. Stir everything together until the spinach has wilted and the sausage is heated through.
  5. Season and Garnish: Season the skillet with salt and black pepper to taste. Garnish with chopped parsley and serve hot.
