Description

This creamy coconut lime chicken offers a delicious blend of tender chicken breasts simmered in a rich coconut milk sauce accented with fresh lime juice, garlic, and a hint of honey. Ready in just 30 minutes, it’s an easy and flavorful dish perfect for a weeknight meal, featuring a light tangy and creamy profile with fresh cilantro garnish.

Ingredients

Scale

Chicken

  • 3-4 boneless, skinless chicken breasts (1.5 lbs), cut into bite-sized pieces

Sauce

  • 4 cloves fresh garlic, minced
  • 1 can (13.5 oz) full-fat coconut milk
  • ¼ cup freshly squeezed lime juice (about 2 limes)
  • 1 cup low-sodium chicken broth
  • 2 tbsp honey

Garnish & Seasoning

  • ¼ cup fresh cilantro, chopped (optional)
  • Salt and pepper to taste
  • 1-2 tbsp cooking oil (for sautéing chicken)

Instructions

  1. Prep Chicken: Measure and cut the chicken breasts into bite-sized pieces to ensure even cooking.
  2. Sauté Chicken: Heat oil in a large skillet over medium-high heat. Add the chicken pieces and cook them until golden brown on all sides, about 5-7 minutes.
  3. Add Garlic: Stir in minced garlic and cook for about 30 seconds, until fragrant, to infuse the chicken with flavor.
  4. Combine Sauce Ingredients: Pour in the coconut milk, chicken broth, and honey; stir thoroughly to combine all the ingredients.
  5. Add Lime Juice and Simmer: Squeeze fresh lime juice into the skillet while gently stirring the sauce. Reduce the heat and simmer for 10-15 minutes until the sauce thickens to a creamy consistency.
  6. Season and Garnish: Taste and season with salt and pepper as desired. Just before serving, stir in the chopped fresh cilantro to add freshness and color.

Notes

  • For extra heat, add a pinch of red pepper flakes when adding garlic.
  • Serve this dish with steamed rice or cauliflower rice to soak up the creamy sauce.
  • Fresh cilantro is optional but highly recommended for added aroma and freshness.
  • Make sure not to overcook the chicken during sautéing to keep it tender.
  • Use full-fat coconut milk for best creaminess and flavor.
