Ingredients
Scale
Chicken
- 3-4 boneless, skinless chicken breasts (1.5 lbs), cut into bite-sized pieces
Sauce
- 4 cloves fresh garlic, minced
- 1 can (13.5 oz) full-fat coconut milk
- ¼ cup freshly squeezed lime juice (about 2 limes)
- 1 cup low-sodium chicken broth
- 2 tbsp honey
Garnish & Seasoning
- ¼ cup fresh cilantro, chopped (optional)
- Salt and pepper to taste
- 1-2 tbsp cooking oil (for sautéing chicken)
Instructions
- Prep Chicken: Measure and cut the chicken breasts into bite-sized pieces to ensure even cooking.
- Sauté Chicken: Heat oil in a large skillet over medium-high heat. Add the chicken pieces and cook them until golden brown on all sides, about 5-7 minutes.
- Add Garlic: Stir in minced garlic and cook for about 30 seconds, until fragrant, to infuse the chicken with flavor.
- Combine Sauce Ingredients: Pour in the coconut milk, chicken broth, and honey; stir thoroughly to combine all the ingredients.
- Add Lime Juice and Simmer: Squeeze fresh lime juice into the skillet while gently stirring the sauce. Reduce the heat and simmer for 10-15 minutes until the sauce thickens to a creamy consistency.
- Season and Garnish: Taste and season with salt and pepper as desired. Just before serving, stir in the chopped fresh cilantro to add freshness and color.
Notes
- For extra heat, add a pinch of red pepper flakes when adding garlic.
- Serve this dish with steamed rice or cauliflower rice to soak up the creamy sauce.
- Fresh cilantro is optional but highly recommended for added aroma and freshness.
- Make sure not to overcook the chicken during sautéing to keep it tender.
- Use full-fat coconut milk for best creaminess and flavor.
