These refreshing Lime Popsicles combine zesty lime, creamy avocado, and cooling coconut flavors for a tropical treat perfect for warm days. With a hint of fresh mint and optional rum, they are blended to a smooth texture and frozen into delightfully creamy, icy pops.

Fruity Base
- 2 tablespoons lime zest
- ½ cup lime juice (freshly squeezed, approx 5-6 limes)
- â…“ cup fresh mint leaves
- 1 large avocado
Creamy Components
- 3.5 oz coconut yoghurt (can substitute with coconut cream or milk)
- 7 oz coconut cream (or full fat canned coconut milk)
Sweetener & Flavor
- 5 tablespoons pure maple syrup
- 3 tablespoons white rum (optional)
Instructions
- Blend Ingredients: Add all the ingredients except the coconut cream into a blender and blend until smooth and creamy. Then add the coconut cream and blend again briefly to combine thoroughly.
- Pour and Freeze: Pour the mixture evenly into ice pop molds. Insert wooden sticks into each mold cavity and place in the freezer. Freeze for at least 5 hours or until completely set and firm.
- Remove Popsicles: To unmold, run the outside of the molds briefly under warm water for a few seconds. This will loosen the popsicles, allowing you to push them out easily without breaking.
- Storage: Store any uneaten popsicles in an airtight container in your freezer for up to one month to maintain freshness and flavor.
Notes
- For a non-alcoholic version, omit the white rum; the popsicles will still be deliciously refreshing.
- You can substitute coconut yoghurt with coconut cream or full-fat coconut milk based on texture preference.
- Use ripe avocado for the creamiest texture and best flavor.
- These popsicles are best enjoyed fresh but can be stored frozen for up to one month.
