Instructions
- Cook the Pasta: Cook the penne pasta according to the package instructions until it is al dente. Once cooked, drain the pasta and set it aside to be combined later.
- Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the bite-sized chicken pieces with salt and pepper, then add them to the skillet. Cook the chicken for 5-7 minutes, turning occasionally, until it is browned on the outside and cooked through. Remove the chicken from the skillet and set aside.
- Sauté the Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced mushrooms and asparagus pieces, sautéing them for about 4-5 minutes until the mushrooms soften and the asparagus becomes tender-crisp. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Make the Cream Sauce: Pour in the chicken broth and bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes to reduce slightly. Then reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Continue cooking and stirring occasionally for 3-5 minutes until the sauce thickens to a creamy consistency.
