Ingredients
Scale
Chicken and Seasoning
- 4 boneless skinless chicken breasts
- ½ teaspoon salt
- ¼ teaspoon black pepper
Cooking Fats
- 1 tablespoon olive oil
- 1 tablespoon butter
Sauce Ingredients
- 4 garlic cloves, minced
- ½ cup chicken broth
- ½ cup heavy cream
- â…“ cup sliced pepperoncini peppers
- 2 tablespoons pepperoncini brine
- ¼ teaspoon red pepper flakes (optional)
- ¼ cup grated Parmesan cheese
Garnish
- Chopped fresh parsley
Instructions
- Prepare Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and cook for 5–6 minutes on each side until golden brown and cooked through. Remove chicken from skillet and set aside.
- Sauté Garlic: Lower heat to medium. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Make Sauce: Pour in chicken broth, heavy cream, sliced pepperoncini peppers, and brine. If desired, add red pepper flakes for extra heat. Bring the mixture to a simmer and cook for 3–4 minutes to allow it to reduce slightly.
- Add Cheese: Stir in the grated Parmesan cheese until it melts smoothly into the sauce.
- Combine and Finish: Return the cooked chicken breasts to the skillet, spooning the sauce over them. Let everything simmer together for another 2–3 minutes to meld the flavors.
- Garnish and Serve: Sprinkle chopped fresh parsley on top and serve the chicken warm, paired nicely with mashed potatoes, rice, or pasta.
Notes
- This dish pairs perfectly with mashed potatoes, rice, or pasta.
- You can substitute chicken thighs for chicken breasts if preferred.
- Adjust the amount of pepperoncini brine to increase or decrease the tanginess of the dish.
