Description

This Crockpot Cheesesteak Potato Casserole is a hearty and comforting dish featuring layers of seasoned ground beef or shaved steak, sautéed onions and bell peppers, tender diced potatoes, and creamy mushroom soup, all topped with melted cheddar cheese. Perfect for a cozy meal, it’s easy to prepare and slow-cooked to perfection in a crockpot.

Ingredients

Scale

Meat and Vegetables

  • 1 lb ground beef or shaved steak
  • 1 onion, diced
  • 1 bell pepper, diced
  • 4 cups diced potatoes (peeled if desired)

Cheese and Liquids

  • 2 cups shredded cheddar cheese
  • 1 can condensed cream of mushroom soup
  • 1/2 cup milk

Spices and Garnish

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Brown the Meat: In a skillet over medium heat, brown the ground beef or shaved steak until no longer pink, then drain excess grease.
  2. Sauté Vegetables: Add diced onion and bell pepper to the skillet and cook for 2-3 minutes until they soften slightly.
  3. Prepare Soup Mixture: In a bowl, combine the condensed cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper, mixing well to create a flavorful sauce.
  4. Layer in Crockpot – First Layer: In the crockpot, place half of the diced potatoes first, then spread half of the beef and vegetable mixture on top, followed by half of the shredded cheddar cheese. Pour half of the soup mixture evenly over this layer.
  5. Layer in Crockpot – Second Layer: Repeat the layering process with the remaining potatoes, beef mixture, shredded cheese, and the rest of the soup mixture to build the casserole.
  6. Cook: Cover the crockpot and cook on low heat for 5 to 6 hours, or until the potatoes are tender and the cheese is melted and bubbly.
  7. Garnish and Serve: Once done, sprinkle with fresh parsley to add color and freshness before serving.

Notes

  • You can substitute ground beef with shaved steak for a more authentic cheesesteak flavor.
  • To save time, use frozen diced potatoes, but ensure they thaw slightly before layering.
  • Adjust seasoning according to taste, adding more garlic or onion powder if desired.
  • This casserole can be prepared the night before by assembling ingredients in the crockpot insert and refrigerating, then cooking the next day.
  • For a cheesy crust, sprinkle extra cheddar on top during the last 30 minutes of cooking.
  • Serve with a side of steamed vegetables or a fresh green salad for a complete meal.
