Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (177°C) to ensure it’s ready for baking the quiche.
  2. Combine Ingredients: In a large bowl, mix the halved grape tomatoes, chopped basil, minced garlic, and 4 ounces of the mozzarella cheese. Transfer this flavorful mixture into a 9-inch pie pan or an 8-inch square baking dish, spreading it evenly.
  3. Whisk Eggs: In the same or a clean bowl, whisk together the 8 eggs, almond milk (or your choice of milk or cream), sea salt, and black pepper until fully combined and slightly frothy. Pour this egg mixture over the tomato and cheese layer in the baking dish.
  4. Bake Initial Layer: Place the baking dish in the oven and bake for 30 to 35 minutes, or until the quiche is beginning to set but remains slightly jiggly in the center, indicating it’s not fully firm yet.
