Ingredients
Scale
Cookie Base
- 1 roll refrigerated sugar cookie dough
- All-purpose flour, for rolling
Filling
- 8 ounces cream cheese, softened
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
Toppings
- 1 cup sliced strawberries
- 1 cup blueberries
- 1 cup mandarin orange segments, drained
- 1 kiwi, peeled and sliced
- 1/2 cup raspberries
Instructions
- Preheat and prepare baking sheets: Preheat your oven to 350°F and line two baking sheets with parchment paper to prevent sticking and ensure even baking.
- Roll and cut the dough: Lightly flour a clean work surface and roll out the refrigerated sugar cookie dough to about 1/4-inch thickness. Use an egg-shaped cookie cutter to cut out cookies and place them spaced evenly on the prepared baking sheets.
- Bake the cookies: Bake the cut-out cookies for 8 to 10 minutes until the edges turn lightly golden. Remove from oven and allow the cookies to cool completely on a wire rack before decorating.
- Prepare the cream cheese topping: In a medium-sized bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until the mixture is smooth and creamy with no lumps.
- Spread the cream cheese layer: Once cookies are completely cooled, spread a generous layer of the sweetened cream cheese mixture evenly over each cookie base.
- Decorate with fruit: Arrange the assorted fruits — strawberries, blueberries, mandarin oranges, kiwi slices, and raspberries — artistically on top of the cream cheese to create a colorful Easter egg effect.
- Chill before serving: Optionally chill the decorated fruit pizzas in the refrigerator for 15 minutes to set the topping slightly and serve them fresh for the best taste.
Notes
- You can use homemade sugar cookie dough instead of the refrigerated dough if preferred for a fresher taste.
- Feel free to swap out fruits based on availability or preference; other berries or sliced fruits work well.
- Pat the fruit dry before placing on the cream cheese to avoid soggy cookies.
