Description

These Easy Christmas Sausage Rolls with Chicken combine savory chicken sausage and festive cranberry sauce wrapped in flaky puff pastry, creating a perfect holiday appetizer or snack that’s quick to prepare and deliciously satisfying.

Ingredients

Scale

Filling

  • 1 lb (450g) chicken sausage (or ground chicken)
  • 1/2 cup breadcrumbs
  • 2 tbsp fresh sage, chopped
  • 1/4 cup cranberry sauce (or dried cranberries)
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp Dijon mustard
  • Salt and pepper, to taste

For Cooking

  • 1 tbsp olive oil (for frying)
  • 1 sheet puff pastry (store-bought or homemade)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the Filling: Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, sautéing until softened and translucent. Mix in the chicken sausage (or ground chicken) and cook until browned and cooked through. Stir in the breadcrumbs, fresh sage, cranberry sauce, Dijon mustard, salt, and pepper. Remove from heat and let it cool slightly.
  2. Assemble Sausage Rolls: Preheat your oven to 400°F (200°C). Roll out the puff pastry sheet on a floured surface. Spread the cooled sausage mixture evenly along one edge of the pastry. Carefully roll the pastry over the filling to enclose it, pressing the edges to seal. Cut the roll into 12 equal pieces.
  3. Apply Egg Wash: Place the sausage rolls on a baking sheet lined with parchment paper. Brush the tops with beaten egg to achieve a golden, glossy finish after baking.
  4. Bake: Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and crisp. Remove from the oven and allow to cool slightly before serving.
  5. Serve: Arrange the sausage rolls on a serving platter and enjoy warm as a festive snack or appetizer.

Notes

  • For a vegetarian option, substitute chicken sausage with a plant-based sausage alternative.
  • Fresh sage can be substituted with dried sage; use 1 tablespoon if dried.
  • If you prefer a sweeter twist, add extra cranberry sauce or dried cranberries.
  • Ensure not to overfill the pastry to prevent leakage during baking.
  • These sausage rolls can be prepared ahead of time and refrigerated before baking.
