Salmon Patties

  • 2 tablespoons mayonnaise
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic salt (or substitute with 1/2 teaspoon fine sea salt and 1/4 teaspoon garlic powder)
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup parsley, finely minced

  • 2 tablespoons unsalted butter, divided


Instructions

  1. Sauté vegetables: Heat 1 tablespoon of olive oil and 1 tablespoon of unsalted butter in a skillet over medium heat. Add the finely diced onion and red bell pepper, sautéing until the vegetables are softened and golden brown. Remove the skillet from heat once done.
  2. Combine ingredients: In a mixing bowl, flake the drained canned salmon. Add the sautéed onion and bell pepper, panko bread crumbs, lightly beaten egg, mayonnaise, Worcestershire sauce, garlic salt, black pepper, and finely minced parsley. Mix everything together until well combined.
  3. Form patties: Shape the mixture into patties approximately 2 inches in diameter and between 1/3 to 1/2 inch thick. Be sure to pack the patties gently to help them hold together while cooking.
  4. Cook patties: Heat the remaining 1 tablespoon olive oil and 1 tablespoon unsalted butter in a non-stick skillet over medium heat. Place the patties in the skillet, cooking them for about 3-4 minutes on each side or until they become golden brown and cooked through.
