For the Quesadilla
- 2 large eggs
- 2 flour tortillas (or corn tortillas for gluten-free)
- 1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
- 1 tablespoon butter or oil
- Salt and pepper, to taste

Instructions
- Prepare the eggs: Crack the eggs into a bowl, season with salt and pepper, and whisk until fully blended and slightly frothy.
- Scramble the eggs: Heat a non-stick skillet over medium heat and melt half of the butter or oil. Pour in the eggs and gently stir with a spatula until they are softly scrambled and just set. Remove from heat.
- Assemble the quesadilla: In the same skillet, add the remaining butter or oil and place one tortilla flat in the pan. Sprinkle half of the shredded cheese evenly on the tortilla, spread the scrambled eggs over the cheese, then top with the remaining cheese. Place the second tortilla on top.
- Cook the quesadilla: Cook over medium heat for 2-3 minutes until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla using a spatula and cook the other side for another 2-3 minutes until golden and the cheese is fully melted.
- Serve: Remove the quesadilla from the skillet and let it rest for a minute. Cut into wedges and serve warm with your choice of optional toppings such as salsa, guacamole, sour cream, hot sauce, chopped cilantro, or diced avocado.
