Ingredients
Scale
Base
- 4 English muffins, split
Sausage and Gravy
- 8 oz breakfast sausage
- ¼ cup sausage drippings (reserved)
- 2 tablespoons all-purpose flour
- 1 cup milk
- Salt, to taste
- Black pepper, to taste
Eggs and Cheese
- 4 large eggs
- 2 tablespoons milk (for scrambling eggs)
- 1 cup mild cheddar cheese, shredded
Instructions
- Cook Sausage: In a cast iron pan over medium heat, cook the breakfast sausage until it is well done and browned. Remove the cooked sausage from the pan and set aside, reserving ¼ cup of the sausage drippings in the pan for the gravy.
- Make Sawmill Gravy: Add the all-purpose flour to the reserved sausage drippings in the pan. Cook the mixture, stirring constantly, until it turns golden brown. Gradually pour in the milk while continuously stirring to prevent lumps. Continue cooking and stirring until the gravy thickens. Season with salt and black pepper to taste.
- Toast English Muffins: While preparing the gravy, lightly toast the split English muffins until they are just golden and crisp on the edges.
- Scramble Eggs: In a separate skillet, whisk the eggs with 2 tablespoons of milk for added fluffiness. Cook over medium heat, stirring gently, until the eggs are just set but still moist and soft. Remove from heat.
- Assemble Breakfast Pizzas: Preheat your oven broiler to high. On a baking sheet, arrange the toasted English muffin halves. Spoon a layer of sawmill gravy on each muffin, followed by a portion of the scrambled eggs, some crumbled cooked sausage, and a generous sprinkle of shredded mild cheddar cheese.
- Broil: Place the assembled English Muffin Breakfast Pizzas under the preheated broiler. Broil for 2-4 minutes, watching carefully until the cheese melts, bubbles, and begins to brown slightly. Remove from the oven and serve immediately.
Notes
- Use a cast iron skillet for cooking the sausage and making gravy for best flavor and heat retention.
- Scrambled eggs can be cooked slightly underdone as they will finish cooking under the broiler.
- Adjust seasoning in the gravy with salt and pepper based on your taste preference.
- Keep a close eye during broiling as cheese can burn quickly.
- To make this recipe lower in fat, use turkey sausage and low-fat milk.
