Ingredients
Scale
Main Ingredients
- 6 cups crispy rice cereal
- 1/4 cup unsalted butter
- 1 (10-ounce) bag mini marshmallows
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
Optional Toppings
- 1/2 cup mini marshmallows
- 1/4 cup peanut butter drizzle or melted peanut butter
Instructions
- Prepare the Baking Dish: Grease a 9×13-inch baking dish with butter or cooking spray and set it aside to prevent the treats from sticking.
- Melt Butter and Marshmallows: In a large saucepan over medium heat, melt the butter. Add the mini marshmallows and stir continuously until they are completely melted and the mixture is smooth.
- Add Peanut Butter and Vanilla: Stir in the creamy peanut butter until well combined, then remove the saucepan from heat. Mix in the vanilla extract to enhance the flavor.
- Combine with Cereal: Quickly pour the marshmallow-peanut butter mixture over the crispy rice cereal in a large mixing bowl. Stir thoroughly to coat all the cereal evenly with the mixture.
- Press into Baking Dish: Transfer the mixture to the prepared baking dish. Use a greased spatula or wax paper to press it down evenly and smooth the top.
- Add Optional Toppings: If using, sprinkle the additional mini marshmallows on top and gently press them into the surface for added texture and sweetness.
- Drizzle with Peanut Butter: Drizzle melted peanut butter over the top of the treats for extra flavor and visual appeal.
- Cool and Set: Allow the treats to cool and set at room temperature for about 30 minutes until firm enough to cut.
- Slice and Serve: Once set, cut the treats into 12 squares and serve immediately.
Notes
- Use wax paper or greased hands to press the mixture into the baking dish to prevent sticking.
- The optional toppings add extra sweetness and texture but can be omitted if preferred.
- Store leftover treats in an airtight container at room temperature for up to 3 days.
- For a nut-free option, substitute peanut butter with sunflower seed butter.
