Ingredients
Scale
Main Ingredients
- 4 corn tortillas
- 1 tablespoon vegetable oil (for frying)
- 1/2 medium onion, diced
- 4 large eggs
- Salt, to taste
- Pepper, to taste
- 1/2 teaspoon garlic powder
Optional Garnish
- Fresh cilantro
- Salsa
- Hot sauce
Instructions
- Fry the Tortillas: Heat the vegetable oil in a skillet over medium heat. Once hot, fry each corn tortilla one at a time for about 2 minutes per side, or until they become crispy and golden brown. Remove the tortillas and place them on a paper towel-lined plate to absorb excess oil.
- Sauté the Onion: In the same skillet, add the diced onion and sauté over medium heat for 3 to 4 minutes until the onions are softened and lightly browned. Then remove from the skillet and set aside.
- Scramble the Eggs: Crack the eggs into a bowl and whisk together with salt, pepper, and garlic powder. Pour the eggs into the skillet and cook over medium heat, stirring occasionally, until the eggs are fully scrambled and cooked through, approximately 3 to 4 minutes.
- Assemble the Dish: Break each fried tortilla into pieces and arrange them on serving plates. Top with the scrambled eggs and sautéed onions.
- Serve and Garnish: Add optional garnishes such as fresh cilantro, salsa, or hot sauce if desired. Serve immediately while the tortillas are still crispy and the eggs are warm.
Notes
- Use corn tortillas for authentic texture and flavor; flour tortillas won’t crisp the same way.
- Adjust the amount of oil based on skillet size to avoid greasy tortillas.
- Add cheese or avocado as additional toppings for extra richness.
- For a spicy kick, add diced jalapeños when sautéing the onions.
- This dish can be easily doubled to serve more people.
