Description

Funfetti Marshmallow Popcorn Treats are a colorful and delightful no-bake dessert combining crunchy popcorn with gooey melted marshmallows and festive rainbow sprinkles. Perfect as a birthday party snack or a sweet treat for any occasion.

Ingredients

Scale

Popcorn Base

  • 8 cups popped popcorn (about 1/3 cup kernels), with any unpopped kernels removed

Marshmallow Mixture

  • 1 bag (10 oz) mini marshmallows
  • 3 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Toppings (Optional)

  • 1/4 cup rainbow sprinkles
  • White chocolate drizzle or extra sprinkles for topping

Instructions

  1. Prepare the Popcorn: Place the popped popcorn in a large mixing bowl, removing any unpopped kernels to ensure a pleasant texture.
  2. Melt the Butter and Marshmallows: In a medium saucepan over low heat, melt the unsalted butter, then add the mini marshmallows. Stir constantly until the marshmallows are fully melted and the mixture becomes smooth.
  3. Add Flavorings: Remove the saucepan from heat and stir in the vanilla extract and salt to enhance the flavor of the marshmallow mixture.
  4. Combine with Popcorn: Immediately pour the melted marshmallow mixture over the popcorn. Gently toss and fold with a spatula to coat the popcorn evenly without crushing it.
  5. Incorporate Sprinkles: Let the mixture cool slightly so it’s no longer hot but still pliable, then fold in the rainbow sprinkles to add fun color and texture.
  6. Shape the Treats: Press the coated popcorn mixture into a greased 9×13-inch pan using lightly greased hands or a spatula to form an even layer.
  7. Set and Serve: Allow the mixture to set for at least 30 minutes at room temperature until firm. Optionally, drizzle with melted white chocolate and sprinkle extra sprinkles before cutting into 12 bars and serving.

Notes

  • Allow the marshmallow mixture to cool slightly before adding sprinkles to prevent melting and color bleeding.
  • Use lightly greased hands or spatula to press the mixture into the pan to avoid sticking.
  • These treats are best enjoyed within 2–3 days for optimal freshness and texture.
  • Store any leftovers in an airtight container to keep them fresh.
