Instructions
- Prepare the batter: In a medium-sized bowl, combine the milk, egg, vanilla extract, and melted butter. Mix thoroughly to combine.
- Add dry ingredients: Stir in the pinch of salt, baking soda, and sugar until well incorporated.
- Add flour: Gradually fold in the all-purpose flour until the batter is smooth and consistent without lumps.
- Prepare for piping: Transfer the batter to a gallon-sized Ziplock bag and set it aside for a few minutes to rest.
- Heat the oil: Pour vegetable oil into a frying pan to a depth of about half an inch. Heat the oil on high for 2 minutes, then reduce to medium heat.
- Test the oil temperature: Drop a small bit of batter into the oil; if bubbles form around the edges immediately, the oil is ready. Adjust heat slightly if needed.
- Fry the funnel cake bites: Cut a small hole in the bottom corner of the Ziplock bag and carefully drizzle the batter into 1 to 2 small circles in the hot oil.
- Cook each side: Fry until the underside is golden brown, then gently flip with a slotted spatula and cook the other side until golden brown as well.
- Drain excess oil: Remove the bites and place them on paper towels to absorb excess grease.
- Serve: Sprinkle with powdered sugar and serve warm with optional whipped cream or fresh fruit toppings.
