Instructions
- Cook the Noodles: Cook the lo mein noodles according to the package instructions until al dente. Drain them and set aside. Keep 1/4 cup of the cooking water reserved to adjust sauce consistency if needed later.
- Prepare the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the pan and set aside.
- Sauté the Vegetables: In the same pan, add the sliced onion, bell pepper, and carrot. Sauté for 3-4 minutes until the vegetables are tender but still crisp. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Make the Garlic Sauce: While the vegetables cook, whisk together soy sauce, oyster sauce, hoisin sauce (if using), sesame oil, rice vinegar, sugar, ground ginger (optional), and red pepper flakes (optional) in a small bowl until well combined.
- Combine the Ingredients: Return the cooked chicken to the pan with the vegetables. Pour the garlic sauce over everything and toss to coat evenly. If the sauce seems too thick, stir in a small amount of the reserved noodle cooking water to achieve desired consistency.
