Description

These Delicious Garlic Potato Pops are crispy, golden bites packed with savory garlic, parmesan, and fresh herbs. Perfect as a snack or appetizer, they combine creamy mashed potatoes with a crunchy breadcrumb coating, fried to perfection in just minutes.

Ingredients

Scale

Potato Mixture

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons minced garlic
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Coating & Frying

  • 1 egg, lightly beaten
  • 1/2 cup breadcrumbs
  • Oil for frying (enough to fill skillet about 1 inch deep)

Instructions

  1. Mix Ingredients: In a large bowl, combine the mashed potatoes, grated parmesan, minced garlic, chopped parsley, black pepper, and paprika. Stir thoroughly until the mixture is smooth and all ingredients are well incorporated.
  2. Shape Potato Pops: Using your hands, form the potato mixture into 1-inch diameter balls. Ensure they are compact to hold together during frying.
  3. Prepare Coating Station: Set up two shallow bowls—one with the beaten egg and the other with the breadcrumbs for breading the potato pops.
  4. Coat Potato Pops: Dip each potato ball first into the beaten egg to moisten, then roll it evenly in the breadcrumbs to coat all sides thoroughly.
  5. Heat Oil: Pour oil into a deep skillet to about 1 inch depth and heat it over medium heat until shimmering but not smoking, roughly around 350°F (175°C).
  6. Fry Potato Pops: Fry the coated potato pops in batches, do not overcrowd the skillet, for 2-3 minutes or until they turn golden brown and crispy on all sides. Turn occasionally to ensure even cooking.
  7. Drain and Serve: Remove the fried pops with a slotted spoon and place them on paper towels to absorb excess oil. Serve immediately with your favorite dipping sauce.

Notes

  • Use leftover mashed potatoes or freshly mashed potatoes for best consistency.
  • Make sure the oil is hot enough before frying to avoid greasy pops.
  • You can substitute parmesan with other hard cheeses like pecorino or asiago for a different flavor.
  • For a spicier version, add a pinch of cayenne pepper to the mixture.
  • Serve immediately to enjoy maximum crispiness, although they can be kept warm in a low oven if needed.
