Ingredients
Scale
Peach Filling
- 4 cups fresh peaches, peeled and sliced (or 2 cans of peaches in light syrup, drained)
- 1/4 cup granulated sugar (or coconut sugar)
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon cornstarch (optional, for thickening)
Topping
- 1 cup gluten-free all-purpose flour (make sure it contains xanthan gum)
- 1/4 cup coconut sugar (or regular sugar)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup cold unsalted butter, cubed
- 1/4 cup unsweetened almond milk (or any milk of choice)
- 1/2 teaspoon vanilla extract
Instructions
- Preheat and Prepare Dish: Preheat your oven to 375°F (190°C) and grease an 8×8-inch baking dish or similar-sized casserole dish with butter or cooking spray to prevent sticking.
- Mix Peach Filling: In a medium bowl, combine the sliced peaches with sugar, lemon juice, cinnamon, nutmeg, and cornstarch if using. Toss everything together until the peaches are well coated, then transfer this mixture into the prepared baking dish.
- Combine Dry Ingredients for Topping: In a separate bowl, whisk together gluten-free flour, coconut sugar, baking powder, and salt to create a uniform dry mixture for the topping.
- Incorporate Butter: Add cold cubed unsalted butter to the dry ingredients. Using a pastry cutter or your fingers, blend the butter in until the mixture takes on a coarse crumb-like texture.
- Add Wet Ingredients to Topping: Stir in the almond milk and vanilla extract to the crumb mixture until just combined, forming a thick but spoonable dough.
- Assemble Cobbler: Spoon dollops of the biscuit topping evenly over the peach filling, ensuring some of the peaches remain visible to allow bubbling.
- Bake: Place the baking dish in the preheated oven and bake for approximately 30 to 35 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
- Cool and Serve: Remove from the oven and let the cobbler cool slightly. Serve warm with optional vanilla ice cream or whipped cream for an extra indulgence.
Notes
- For a thicker filling, use the optional cornstarch.
- Ensure your gluten-free flour blend contains xanthan gum to help with texture.
- Fresh peaches can be substituted with canned peaches but drain syrup to reduce sweetness and excess moisture.
- Butter should be cold for the best topping texture.
- Serve warm with vanilla ice cream or whipped cream for added richness.
