Instructions

  2. Blend the Dressing: In a food processor or mini-chopper, combine the soaked onion, garlic cloves, olive oil, apple cider vinegar, and ground cumin. Pulse the mixture until the onion and garlic are finely chopped and the dressing becomes fragrant with a slightly chunky texture.
  3. Assemble the Salad: Place the grated carrots into a large mixing bowl. Pour the prepared dressing over the carrots, then add the chopped cilantro and parsley. Toss thoroughly to coat the carrots evenly with the dressing and fresh herbs.
