Description

A refreshing and vibrant Mediterranean-inspired Green Bean and Feta Salad featuring crisp blanched green beans tossed with tangy feta, crunchy toasted almonds, and a flavorful dill vinaigrette. Perfect as a healthy side dish for summer or any meal.

Ingredients

Scale

Salad Ingredients

  • 1 pound fresh green beans, trimmed
  • 1/2 small red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted slivered almonds
  • 2 tablespoons chopped fresh dill

Dressing Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, minced
  • Salt and black pepper, to taste

Instructions

  1. Blanch Green Beans: Bring a large pot of salted water to a boil. Add the green beans and cook for 2–3 minutes until just tender but still crisp. Drain and immediately transfer the beans to a bowl of ice water to halt the cooking process. Once cooled, drain thoroughly and pat dry with a clean towel.
  2. Prepare Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined to create the dressing.
  3. Combine Salad: In a large mixing bowl, toss together the blanched green beans, thinly sliced red onion, crumbled feta cheese, toasted slivered almonds, and chopped fresh dill.
  4. Toss with Dressing: Pour the prepared dressing over the salad ingredients and gently toss to evenly coat everything without bruising the delicate feta.
  5. Serve: Serve the salad chilled or at room temperature as a bright, healthy side dish that complements many main courses.

Notes

  • For extra crunch, add more toasted nuts such as walnuts or pine nuts.
  • This salad can be made several hours ahead—add the feta cheese just before serving to maintain the best texture.
