- Make Crust Mixture: In a bowl, combine almond flour, melted coconut oil, maple syrup, and salt, mixing until the mixture becomes crumbly and cohesive enough to press into the pan.
- Form Crusts: Press the crumbly mixture evenly into the bottom of each muffin cup, creating a uniform base layer for the Twix cups.
- Bake Crusts: Bake the crusts in the preheated oven for 8-10 minutes until they turn lightly golden brown, then remove them and let them cool completely.
- Prepare Caramel Layer: In a food processor, blend the pitted medjool dates, almond butter, coconut milk, coconut sugar, and vanilla extract until the mixture is smooth and creamy, forming a natural caramel filling.
- Assemble Caramel Layer: Spread the caramel evenly over each cooled crust in the muffin tin, then place the tray in the freezer for 15 minutes to allow the caramel to set firmly.
- Melt Chocolate: In a microwave-safe bowl, melt the dark chocolate chips by heating in 30-second intervals, stirring in between until the chocolate is smooth and fully melted.
- Top with Chocolate: Pour the melted chocolate over the set caramel layer evenly in each muffin cup, then refrigerate the entire tin for 30 minutes to allow the chocolate topping to harden.
