Description

These High Protein McGriddle Bites are a delicious and convenient breakfast option combining savory sausage, protein-packed pancake mix, cheddar cheese, and sugar-free maple syrup. Baked to golden perfection in a muffin tin, they offer a perfect balance of flavors and texture, making a hearty grab-and-go meal that’s both satisfying and protein-rich.

Ingredients

Scale

Sausage Mixture

  • 1 lb breakfast sausage, cooked

Batter

  • 2 cups protein pancake mix (such as Kodiak)
  • 1 1/2 cups water
  • 1/4 cup sugar-free maple syrup
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees F (175°C) and grease a 12-cup muffin tin to prevent sticking.
  2. Mix Batter: In a mixing bowl, combine the protein pancake mix with water to form pancake batter. Then add the cooked breakfast sausage, shredded cheddar cheese, and sugar-free maple syrup. Mix thoroughly until all ingredients are evenly incorporated.
  3. Fill Muffin Cups: Spoon the prepared batter into each muffin cup, filling them about three-quarters full to allow room for rising during baking.
  4. Bake: Place the muffin tin in the preheated oven and bake for 18 to 23 minutes, or until the bites turn golden brown and are cooked through.
  5. Cool and Serve: Remove the muffin tin from the oven and let the McGriddle Bites cool slightly. Carefully remove each bite from the tin and serve warm, optionally with additional maple syrup for dipping.

Notes

  • Ensure sausage is fully cooked before mixing with batter to avoid undercooked meat.
  • Use a non-stick spray or grease well to easily remove bites from the muffin tin.
  • Can be stored in an airtight container in the refrigerator for up to 4 days and reheated before serving.
  • For a spicier version, add a pinch of cayenne pepper or chopped jalapeños to the batter.
  • These bites freeze well; freeze individually on a baking sheet and transfer to a sealed container.
