Ingredients
Scale
Meat
- 1 lb ground beef
Vegetables
- 4 medium potatoes, peeled and thinly sliced
- 1 medium onion, chopped
- 1 cup frozen mixed vegetables (carrots, peas, corn, etc.)
Other Ingredients
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
- 1/2 cup beef broth (or water)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups shredded cheddar cheese, divided
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Cook Ground Beef: In a skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it apart as it cooks. Drain any excess fat.
- Sauté Onion and Season: Add the chopped onion to the beef and sauté until softened. Stir in garlic powder, onion powder, dried thyme, salt, and pepper to season the mixture well.
- Prepare the Casserole Mixture: In a large bowl, combine the cooked ground beef mixture, frozen mixed vegetables, cream of mushroom soup, and beef broth. Mix everything until well blended.
- Layer the Casserole: In a greased 9×13 inch baking dish, layer half of the sliced potatoes in an even layer. Pour half of the beef and vegetable mixture over the potatoes, spreading evenly. Sprinkle with 1 cup of shredded cheddar cheese. Repeat the layering with the remaining potatoes, beef mixture, and finish with the remaining 1 cup of cheddar cheese on top.
- Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 40 minutes. Then remove the foil and bake for an additional 15 minutes or until the potatoes are tender and the cheese is golden and bubbly.
- Rest and Serve: Let the casserole rest for 5 minutes before serving to allow it to set. Serve hot and enjoy a comforting meal.
Notes
- You can substitute cream of chicken soup for cream of mushroom soup if preferred.
- Using thinly sliced potatoes helps ensure they cook through evenly within the baking time.
- Feel free to add your favorite vegetables or adjust seasoning according to taste.
- For a lower-fat version, use lean ground beef and reduced-fat cheese.
- This casserole reheats well, making it perfect for leftovers.
