Ingredients
Scale
For the McGriddle Pancakes (Buns)
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 large egg
- ¾ cup milk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup
For the Filling
- 4 large eggs
- 4 slices cooked bacon
- 4 slices American cheese (or your favorite cheese)
- Maple syrup (for drizzling)
Instructions
- Make the pancake batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt to blend the dry ingredients well.
- Combine wet ingredients: In a separate bowl, beat the egg, then stir in the milk, melted butter, vanilla extract, and maple syrup until combined.
- Mix wet and dry ingredients: Pour the wet mixture into the dry ingredients and gently stir until just combined. Avoid overmixing; a few lumps are fine.
- Cook pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray. Pour 2–3 tablespoons of batter per pancake. Cook 2–3 minutes until bubbles appear on the surface, then flip carefully and cook another 1–2 minutes until golden brown.
- Keep pancakes warm: Continue making pancakes in batches, placing cooked pancakes in a warm oven to keep them hot.
- Cook bacon: Using a skillet on medium heat, cook bacon slices until crispy and golden brown. Remove and set aside on paper towels to drain.
- Cook eggs: In the same skillet, cook eggs as desired—scrambled or fried. For fried eggs, cook whites until set with yolks runny or cooked longer for firmer yolks. Remove from heat.
- Assemble the McGriddles: Place one pancake on a plate, layer with a slice of cheese, a crispy bacon slice, then a cooked egg. Top with another pancake.
- Add maple syrup: Drizzle maple syrup over the assembled sandwich to enhance the signature sweet-savory flavor.
- Serve: Serve immediately with extra maple syrup on the side if desired for dipping or drizzling.
Notes
- Do not overmix the pancake batter to keep pancakes light and fluffy.
- Using American cheese closely replicates the classic McGriddle flavor, but you can substitute with your favorite cheese.
- Keep cooked pancakes warm in a low oven while preparing the filling.
- You can customize eggs by cooking them your preferred way, but fried eggs with runny yolks add richness.
- For a gluten-free version, substitute flour with a gluten-free blend.
