Description

This Lemon Butter Sautéed Cod recipe features tender cod fillets cooked to perfection in a skillet, then finished with a zesty lemon butter sauce. The combination of fresh lemon juice, garlic, and parsley creates a bright, flavorful dish that’s quick and easy to prepare, perfect for a healthy weeknight dinner.

Ingredients

Scale

Fish

  • 4 cod fillets (about 6 oz each)

Butter Sauce

  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest

Seasoning & Garnish

  • Salt and pepper to taste
  • 1 tbsp fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Prepare the Cod: Pat the cod fillets dry with paper towels to remove any excess moisture. Season both sides generously with salt and pepper to enhance the natural flavor of the fish.
  2. Sauté the Cod: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. When the butter has melted and the skillet is hot, add the cod fillets. Cook for 3-4 minutes on each side, or until the fish is golden brown and cooked through, with an internal temperature of 145°F (63°C). Remove the cooked cod from the pan and set aside.
  3. Make the Lemon Butter Sauce: In the same skillet, add the remaining tablespoon of butter and minced garlic. Sauté for 1-2 minutes until the garlic is fragrant and lightly golden. Add the fresh lemon juice and lemon zest, stirring to combine well. Allow the sauce to simmer for about a minute to slightly thicken.
  4. Finish the Dish: Return the cooked cod fillets to the skillet, spooning the lemon butter sauce over the fish. Let them cook together for an additional minute to absorb the flavors, basting the fillets frequently with the sauce.
  5. Serve: Carefully transfer the cod fillets to serving plates. Drizzle any remaining lemon butter sauce over the top, garnish with fresh chopped parsley, and serve with lemon wedges on the side for an extra burst of citrus.

Notes

  • Use fresh lemon juice and zest for the best flavor impact.
  • Ensure the cod fillets are dry before seasoning to get a nice sear.
  • Cooking time may vary depending on thickness of fillets; adjust accordingly.
  • This dish pairs well with steamed vegetables, rice, or a fresh salad.
  • Check the internal temperature of the fish to ensure it is fully cooked but still moist.
