Description

This Loaded Hummus Dip is a vibrant and flavorful appetizer combining creamy hummus with fresh, colorful vegetables, tangy olives, and savory feta cheese. Enhanced by olive oil, herbs, and a touch of spice, it’s perfect for serving with pita chips or fresh pita bread as a crowd-pleasing starter or snack.

Ingredients

Scale

Base

  • 2 cups hummus (store-bought or homemade)

Vegetables & Toppings

  • 1 cup cherry tomatoes, diced
  • 1 cup cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup Kalamata olives, sliced
  • ¼ cup pickled pepperoncini peppers or bell peppers, diced
  • ½ cup crumbled feta cheese or plant-based feta for vegan option
  • Capers, radishes, pickles, toasted chickpeas, or chopped chives (optional garnish)
  • Toasted pine nuts (optional)
  • Lemon wedges for serving

Seasonings & Dressings

  • 2 tbsp olive oil
  • 1 tbsp fresh parsley or dill, chopped
  • 1 tsp dried oregano
  • A squeeze of fresh lemon juice or a splash of red wine vinegar
  • A sprinkle of paprika, cumin, or sumac

Accompaniment

  • Pita chips or sliced pita bread

Instructions

  1. Prepare the veggies: Dice the cherry tomatoes, cucumber, and pickled pepperoncini or bell peppers. Finely chop the red onion and slice the Kalamata olives. Set aside.
  2. Mix the toppings: In a bowl, combine the diced vegetables, olives, finely chopped red onion, feta cheese, olive oil, fresh parsley or dill, dried oregano, and a squeeze of fresh lemon juice or red wine vinegar. Stir gently to coat the veggies in the dressing and seasonings.
  3. Assemble the dip: Spread the hummus evenly on a serving platter or shallow bowl. Spoon the prepared veggie and feta mixture generously over the top of the hummus, allowing any juices to drizzle down for extra flavor.
  4. Add garnishes: Sprinkle optional toppings such as capers, radishes, pickles, toasted chickpeas, chopped chives, toasted pine nuts, and a dusting of paprika, cumin, or sumac on the dip as desired.
  5. Serve: Present the dip with lemon wedges and pita chips or sliced pita bread for dipping. Enjoy immediately or chill briefly for flavors to meld.

Notes

  • Use plant-based feta cheese to make this recipe vegan-friendly.
  • Feel free to add more or fewer toppings according to taste and availability.
  • Leftover dip can be refrigerated in an airtight container for up to 3 days.
  • For a smoother presentation, pulse the hummus briefly to ensure creaminess before spreading.
  • To add crunch, toast pine nuts or chickpeas until golden and sprinkle on top just before serving.
