Description

McGriddle Bites are a delicious breakfast treat that combines savory breakfast sausage, fluffy pancake batter infused with maple syrup, and melted cheddar cheese. Baked in a mini muffin tin, these bite-sized morsels offer a perfect balance of sweet and savory flavors, ideal for a quick morning snack or brunch appetizer.

Ingredients

Scale

Sausage

  • 1 package (8 oz) breakfast sausage

Pancake Batter

  • 1 cup pancake mix (plus ingredients required on the box, typically water or milk, eggs, etc.)
  • ¼ cup milk (for pancake batter)
  • 1 tablespoon maple syrup

Add-ins

  • 1 cup shredded cheddar cheese

Other

  • 1 tablespoon butter (for greasing the pan)
  • Maple syrup, for drizzling (optional)

Instructions

  1. Cook the Sausage: Heat a skillet over medium heat and cook the breakfast sausage until browned and fully cooked, breaking it into small crumbles as it cooks. Remove from heat and set aside.
  2. Prepare Pancake Batter: Follow the pancake mix package instructions, adding ¼ cup milk and 1 tablespoon maple syrup to the batter to impart a subtle sweetness.
  3. Grease Mini Muffin Tin: Lightly butter or spray a mini muffin tin to prevent sticking.
  4. Fill Muffin Cups: Pour the pancake batter into the muffin cups, filling each about two-thirds full.
  5. Add Sausage and Cheese: Top each muffin cup with a spoonful of cooked sausage crumbles and a pinch of shredded cheddar cheese.
  6. Bake: Place the muffin tin in a preheated oven at 375°F (190°C) and bake for 12-15 minutes until the bites are golden brown and fully cooked through.
  7. Cool and Serve: Allow the McGriddle Bites to cool slightly before removing from the tin. Optionally, drizzle with additional maple syrup for extra sweetness and serve warm.

Notes

  • Use mini muffin tins for perfectly sized bite-sized treats.
  • Feel free to substitute cheddar cheese with your favorite cheese like Monterey Jack or pepper jack for a spicy kick.
  • These bites can be made ahead and reheated in the microwave for a quick breakfast option.
  • Adjust maple syrup amount in batter and for drizzle based on your preferred sweetness level.
