Description

A comforting and savory Mushroom and Swiss Cheese Meatloaf recipe that combines ground beef and pork with aromatic herbs, sautéed mushrooms, and melted Swiss cheese for a deliciously hearty meal perfect for family dinners.

Ingredients

Scale

Meatloaf

  • 1 lb (450g) ground beef
  • 1/2 lb (225g) ground pork (optional)
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme or parsley

Mushroom Topping

  • 1 tablespoon olive oil
  • 1 cup mushrooms, sliced
  • 1 tablespoon butter
  • 1 tablespoon Worcestershire sauce (for the mushrooms)

Finishing

  • 4-6 slices of Swiss cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet or loaf pan with parchment paper or lightly grease it.
  2. Prepare the Meatloaf Mixture: In a large mixing bowl, combine ground beef, ground pork (if using), breadcrumbs, egg, milk, finely chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, and dried thyme or parsley. Mix gently until all ingredients are just combined, being careful not to overmix to keep the meatloaf tender.
  3. Shape and Bake: Form the mixture into a loaf shape and place it on the prepared baking sheet or inside a loaf pan. Bake in the preheated oven for 45-50 minutes or until the internal temperature reaches 160°F (71°C), indicating it’s fully cooked.
  4. Sauté the Mushrooms: While the meatloaf bakes, heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté for 5-6 minutes until golden brown. Stir in butter and Worcestershire sauce, cooking for an additional 2 minutes to infuse flavor. Remove from heat and set aside.
  5. Add Swiss Cheese and Mushrooms: Once the meatloaf finishes baking, take it out of the oven and layer slices of Swiss cheese over the top. Spread the sautéed mushrooms evenly on the cheese. Return the meatloaf to the oven and bake for another 5-7 minutes, until the cheese is melted and bubbly.
  6. Garnish and Serve: Remove the meatloaf from the oven and let it rest for a few minutes to allow juices to redistribute. Garnish with freshly chopped parsley and serve warm for a comforting meal.

Notes

  • Using a mixture of ground beef and pork enhances flavor and moisture, but you can use all beef if preferred.
  • Do not overmix the meat mixture to avoid a dense, tough meatloaf.
  • Check meatloaf’s internal temperature with a meat thermometer to ensure it is safely cooked.
  • Sautéing mushrooms adds extra flavor but can be skipped if desired.
  • Letting the meatloaf rest before slicing helps keep it moist and easier to cut.
