Mushroom Mixture
- 2 cups mushrooms, sliced (button or cremini mushrooms work well)

- Salt and pepper, to taste
Sandwich
- 4 slices sourdough or any hearty bread
- 4 slices of cheese (Swiss, cheddar, or mozzarella)
- 2 tablespoons butter (for grilling)
Instructions
- Sauté the Mushrooms: In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat.
- Cook Mushrooms and Onions: Add the sliced mushrooms and onions, and sauté until the mushrooms release their moisture and become golden brown, about 7-10 minutes.
- Add Garlic and Thyme: Add the minced garlic and thyme (if using), and cook for an additional 1-2 minutes until fragrant.
- Season: Season with salt and pepper to taste. Remove from heat and set aside.
- Assemble the Sandwiches: Lay out the slices of bread on a clean surface.
- Add Mushroom Mixture: Spoon the sautéed mushrooms and onions evenly onto 2 slices of bread.
- Top with Cheese: Place a slice of cheese on top of each mushroom pile.
- Close Sandwich: Top with the remaining slices of bread.
- Heat Skillet: Heat a nonstick skillet or griddle over medium-low heat.
- Butter the Sandwiches: Butter the outside of the sandwiches with 1-2 tablespoons of butter.
- Grill the Sandwiches: Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
