Description

A delicious and comforting Mushroom Sandwich Melts recipe featuring sautéed mushrooms and onions topped with melted cheese between buttery, toasted slices of hearty bread. Perfect for a quick and satisfying meal.

Ingredients

Scale

Mushroom Mixture

  • 2 cups mushrooms, sliced (button or cremini mushrooms work well)
  • 1 medium onion, thinly sliced
  • 2 tablespoons butter (for sautéing)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon thyme (optional)
  • Salt and pepper, to taste

Sandwich

  • 4 slices sourdough or any hearty bread
  • 4 slices of cheese (Swiss, cheddar, or mozzarella)
  • 2 tablespoons butter (for grilling)

Instructions

  1. Sauté the Mushrooms: In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat.
  2. Cook Mushrooms and Onions: Add the sliced mushrooms and onions, and sauté until the mushrooms release their moisture and become golden brown, about 7-10 minutes.
  3. Add Garlic and Thyme: Add the minced garlic and thyme (if using), and cook for an additional 1-2 minutes until fragrant.
  4. Season: Season with salt and pepper to taste. Remove from heat and set aside.
  5. Assemble the Sandwiches: Lay out the slices of bread on a clean surface.
  6. Add Mushroom Mixture: Spoon the sautéed mushrooms and onions evenly onto 2 slices of bread.
  7. Top with Cheese: Place a slice of cheese on top of each mushroom pile.
  8. Close Sandwich: Top with the remaining slices of bread.
  9. Heat Skillet: Heat a nonstick skillet or griddle over medium-low heat.
  10. Butter the Sandwiches: Butter the outside of the sandwiches with 1-2 tablespoons of butter.
  11. Grill the Sandwiches: Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
  12. Serve: Once the sandwiches are crispy and golden, remove from the skillet and cut in half. Serve immediately.

Notes

  • Button or cremini mushrooms work best for this recipe but feel free to experiment with other types.
  • Use sturdy bread like sourdough to hold the filling without becoming soggy.
  • You can switch up the cheese types depending on your preference; Swiss, cheddar, or mozzarella all melt well.
  • For a richer flavor, add fresh thyme or other herbs while sautéing mushrooms.
  • Make sure to cook the mushrooms until golden brown for maximum flavor and moisture release.
  • Butter the outside of the sandwich generously for a crispy, golden crust.
