Toffee Pudding Layer
- 1/2 cup (120ml) heavy cream
- 1/4 cup (30g) powdered sugar (optional, for sweetness)
- 1 tsp vanilla extract
- 1/2 cup (80g) toffee or caramel bits (optional, for topping)
Instructions
- Prepare the Biscuit Base: In a large bowl, crush the digestive biscuits into small pieces, ensuring they’re not too fine like crumbs. In another bowl, mix the melted butter, sweetened condensed milk, and toffee or caramel sauce together. Pour this wet mixture over the crushed biscuits and stir thoroughly until all biscuit pieces are coated evenly.
- Press into the Pan: Line an 8×8-inch (20×20 cm) square pan with parchment paper. Transfer the biscuit mixture into the pan and press firmly and evenly to create a compact base layer. Place the pan in the refrigerator to chill while you prepare the pudding topping.
- Make the Toffee Pudding Layer: In a medium bowl, whip the heavy cream together with powdered sugar (if using) and vanilla extract until stiff peaks form. Once whipped, gently fold in the toffee or caramel sauce, ensuring it blends evenly without deflating the cream.
- Assemble the Slice: Spread the creamy toffee pudding mixture evenly over the chilled biscuit base using a spatula to smooth the top.
