Description

A flavorful and comforting Chickpea Curry simmered in a rich tomato and coconut milk sauce, infused with aromatic spices and fresh herbs. This easy-to-make stovetop dish is perfect for a hearty vegetarian meal.

Ingredients

Scale

Spices and Flavorings

  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper to taste

Vegetables and Aromatics

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • Fresh cilantro, for garnish

Main Ingredients

  • 1 can (400g) diced tomatoes
  • 1 can (400g) coconut milk
  • 2 cans (400g each) chickpeas, drained and rinsed

Instructions

  1. Heat the Oil: Warm 1 tablespoon of olive oil in a large pan over medium heat to create a fragrant base for the curry.
  2. Sauté Onions: Add the diced onion and sauté for about 5 minutes until they become translucent, softening and releasing their sweetness.
  3. Add Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking for an additional minute to enhance the flavor.
  4. Add Spices: Mix in the curry powder, ground cumin, turmeric, and optional cayenne pepper. Cook the spices for 1-2 minutes to bloom their flavors.
  5. Add Liquids: Pour in the diced tomatoes and coconut milk, stirring well to combine the ingredients into a rich sauce.
  6. Add Chickpeas and Simmer: Stir in the drained chickpeas and bring the mixture to a gentle simmer. Let it cook for 15 to 20 minutes, stirring occasionally, to thicken the curry and meld the flavors.
  7. Season: Taste and season with salt and pepper as needed to balance the flavors.
  8. Garnish and Serve: Sprinkle fresh cilantro over the top just before serving for a fresh herbal aroma and taste.

Notes

  • This curry can be served over rice or with flatbread for a complete meal.
  • For a spicier version, increase the cayenne pepper or add fresh chili.
  • Leftovers keep well refrigerated for up to 3 days and taste even better the next day.
  • Can be made vegan by ensuring the curry powder contains no animal products (most do not).
