- 1 can (400g) diced tomatoes
- 1 can (400g) coconut milk
- 2 cans (400g each) chickpeas, drained and rinsed
Instructions
- Heat the Oil: Warm 1 tablespoon of olive oil in a large pan over medium heat to create a fragrant base for the curry.
- Sauté Onions: Add the diced onion and sauté for about 5 minutes until they become translucent, softening and releasing their sweetness.
- Add Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking for an additional minute to enhance the flavor.
- Add Spices: Mix in the curry powder, ground cumin, turmeric, and optional cayenne pepper. Cook the spices for 1-2 minutes to bloom their flavors.
- Add Liquids: Pour in the diced tomatoes and coconut milk, stirring well to combine the ingredients into a rich sauce.
- Add Chickpeas and Simmer: Stir in the drained chickpeas and bring the mixture to a gentle simmer. Let it cook for 15 to 20 minutes, stirring occasionally, to thicken the curry and meld the flavors.
- Season: Taste and season with salt and pepper as needed to balance the flavors.
- Garnish and Serve: Sprinkle fresh cilantro over the top just before serving for a fresh herbal aroma and taste.
